- 1 c. quinoa
- 2 c. vegetable broth
- ½ c. fresh basil
- 1 ball of mozzarella or burrata
- ½ pint cherry or grape tomatoes
- ½ tbsp. olive oil
- ½ tbsp. balsamic vinegar
Cook quinoa according to directions in vegetable broth. Chop the basil, mozzarella, and tomatoes. Mix together with the quinoa and drizzle the olive oil and balsamic vinegar.
