Sweet Potato Chips

Ingredients

- 2 whole sweet potatoes
- 1 tbsp. olive oil
- 1 tsp. coarse salt
- 1 tsp. black pepper

Directions

Preheat oven to 400°F. Using a mandolin or very sharp knife, slice potato as thin as possible and mix with olive oil, salt, and pepper. Place on a sheet pan in a single layer and bake for 20-25 minutes (flipping once halfway through).

Taking a break from food to send you 💕 from Portsmouth! Picked up these beauties from @byemilyb while at @gusandrubyletterpress 🥰 Happy Valentine’s Day! ❤️ Snowstorms call for cozy meals ❄️ Baked chicken parmesan ::::::::::::
#recipe: Preheat oven to 350. Sprinkle salt, pepper, and garlic powder on 3-4 chicken breasts. On the stovetop, heat veg oil over medium heat and brown the chicken on both sides (about 2-3 minutes a side). Mix 1 c of panko bread crumbs with 1 tsp salt, 1 tsp pepper, and 1 tbsp parmesan cheese and set aside. In an oven safe dish, spread half a jar (12 oz) of your favorite marinara (mine is @raoshomemade) on the bottom and place the browned chicken on top. Cover the chicken with mozzarella (fresh sliced or fresh shaved is best!), some sprigs of fresh basil, and the panko crumb mixture. Cover in foil and bake for 15 minutes until sauce is bubbly and cheese is melted. Remove foil and broil on high for 5 minutes until crumbs are browned - just watch to make sure it doesn’t burn! Serve with your favorite pasta or side salad. Mix dry ingredients together in a small bowl: 2 c white whole wheat flour (I used @traderjoes), 1/4 c sugar, 1 tsp salt, 1/2 tsp baking soda, 2 tsp baking powder. In a larger separate bowl, mix 2 1/2 c buttermilk, 1/2 c veg oil (I used avocado), and 2 eggs. Slowly add dry ingredients to wet ingredients and mix until combined. Cook waffles according to waffle iron directions. Mine calls for 3/4 c of mixture. (#recipe for waffles by throughherlookingglass.com - she’s not on @instagram but recipe can be googled!) While waffle iron was heating I preheated the oven to 350 and mixed 2 cups of berries (strawberries, blueberries, blackberries, and raspberries) with 1 tbsp of sugar. I roasted the berries for 10 minutes until just softened. When waffles were ready, I garnished with berries, vanilla bean infused maple syrup (also from @traderjoes), and powdered sugar. The waffles were perfectly crispy on the outside and soft on the inside. Delicious! Pomegranate season! I love adding pom seeds to salads, on top of smoothie bowls, or as a quick snack. Research has shown that the juice in pomegranates has a higher antioxidant activity than red wine or green tea!

Have you tried blood oranges (the ones with the darker red flesh) or Cara Cara oranges (the smaller ones with pinkish flesh)? Those are two of my favorites - super juicy and slightly sweet but not too much. Always a staple in my house during the winter months.

Eating one orange can provide you with your day’s worth of vitamin C and 15% of your daily fiber. Citrus is also a fantastic way to brighten up your salads, your sauces, your dressings, your water, or your day!

But that’s okay! A go-to in my house when creativity is pretty much gone: chicken broccoli penne. An easy, family-friendly meal that will please everyone and get you back to your to-do list in no time. #recipe below!

Preheat oven to 375. Dredge 1.5 pounds of chicken in flour (about 1.5 cups), garlic powder, salt, and pepper (1 tsp each). Place 1 tbsp of avocado oil in an oven safe pan and brown the chicken on medium-high heat for 3 minutes a side. Place in oven for 15-20 minutes (until chicken is cooked through). Chop into smaller pieces when cool enough to handle and set aside. Cook whole wheat penne (or chickpea pasta) in chicken broth according to directions. With 6 minutes left on the pasta, add 2 cups of chopped broccoli to pasta and broth, cooking together for the remaining time (until both are tender). Save 1 cup of pasta broth before straining. Melt 1/2 cup of fresh shaved Parmesan cheese in the saved pasta broth and set aside as your sauce. Once pasta and broccoli have been strained, add chicken and sauce and mix thoroughly. Add salt and pepper to taste. Enjoy! .
